I had these bananas sitting on the table slowly getting old and wanting to be use in some way. I really wanted to do something different from the usual banana bread, banana smoothie or banana pancakes. I was thinking bananas in cookies would be nice. So I did some searching on my favorite platform for recipes, Pinterest, and did a search to if there was a such a thing, banana cookies. Of course, there were recipes, for cookies with bananas in them and even better, banana chocolate chip cookies. After looking at a number of recipes and looking at what I had in my cupboards, this is what was born.
Banana Oatmeal Cookies

Really nice and moist chocolate chip cookies, almost like a banana bread.
Ingredients
- 1c butter
- 1/2 c white sugar
- 1/2 c brown sugar
- 2 eggs
- 1 tsp baking soda
- 1 tsp vanilla
- 2c flour
- 2c rolled oats
- 1 tsp cinnamon
- 1/2 tsp salt
- 3 bananas, mashed
- 1 c chocolate chips
Instructions
- Preheat oven to 375C.
- Cream together butter and sugars.
- Beat in eggs and vanilla.
- In a separate bowl, mix flour, oatmeal, baking soda, cinnamon and salt.
- Add dry ingredients to butter and sugar mixture.
- Mix in mashed bananas and chocolate chips.
- Using a cookie scoop, scoop mixture into cookie tray.
- Bake for 12 minutes or until edges are brown.
- Cool.
