I’ve always wanted to make donuts but the frying always put me off from the idea. However, when I learned about baked donuts, well, that was a game changer and every since I will make a batch of baked donuts. This recipe in particular has been an instant success with anyone I give them too. Baked blueberry donuts with lemon glaze. They are full of freshly squeezed lemon juice and lemon zest which I think makes all the difference. Using frozen or fresh blueberries makes a big difference too. I learn through this recipe that coating the blueberries with a bit of flour helps them keep their shape when combining them in the mixture otherwise you end up with a big blue blob of dough. I’ve been thinking about trying the same recipe but with a different citrus fruit like oranges, limes or grapefruit. But alas, this is still but a dream.
Baked Blueberry donuts (with lemon glaze)

Lemon Glaze
- 1 c icing sugar
- 2 tbsp lemon juice
- 1 tbsp lemon zest

Ingredients
- 1 c flour + 1 tbsp flour to toss blueberries with
- 1/2 c sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/3 c vanilla almond milk
- 1 egg
- 3 tbsp butter (unsalted)
- 2 tsp vanilla extract
- 1 tbsp lemon zest
- 2/3 c frozen blueberries or fresh
Instructions
- Preheat oven to 425F.
- Grease donut pan.
- Combine flour, sugar, baking powder and salt.
- In another bowl, whisk together milk, egg, butter, vanilla extract and lemon zest.
- Add milk mixture to flour mixture.
- Toss blueberries with the 1 tbsp flour.
- Fold floured blueberries into mixture.
- Fill donut pan with blueberry mixture.
- Bake for 12-13 minutes or until knife comes out clean.
- Let donuts cool in pan for about 10 minutes before removing.
- Cool on wire rack.
- Mix lemon glaze ingredients together.
- When donuts are cooled, dip donuts in lemon glaze.
Besides baked blueberry donuts with lemon glaze what other baked donuts could there be?
Sky’s the limit when it comes to baking and much healthier too. Below are some interesting variations and modifications to the above recipe.
- Instead of adding blueberries, why not add in cherries, or raspberries of any other berry.
- For something a bit on the sweeter side, why not substitute the blueberries for chocolate chips, or salted caramel chips?
- I always like the idea of trying something savory in a traditionally sweet recipe. So instead of the lemon glaze and the blueberries, what about chives inside the donut and a Cheddar or Parmesan cheese on top?
